Gulgula | Indian Doughnut


Gulgula is a classic Fijian Indian sweet treat which is made from flour, bananas, spices and milk. It's deep fried until crispy and golden on the outside while it is still light and fluffy on the inside. It's a perfect snack with a cup of masala tea. 

Makes: Approx. 20 Gulgulas 
Ready in: 20 minutes

Ingredients 

1 cup self raising flour 
1/4 cup castor sugar 
1 ripe banana, mashed
1 tsp cardamon powder 
1/4 milk 
1 splash of vanilla extract (optional)
Oil for deep frying

Method

Place all dry ingredients in a large bowl and combine with a spoon. Add vanilla extract, mashed banana and gradually add milk until the batter is semi-thick and slightly lumpy. (See note 1)

Heat a large wok over medium heat with enough oil to deep fry. Test the oil by placing a small amount of batter, it should sizzle and float to the top.

When oil is ready, scoop a small amount of batter into your palm and use a pouring motion to drop it into the oil, squeezing your fist to release. Alternatively you can use a spoon or ice-cream scoop.

Fry Gulgula on low-medium heat until golden in colour and cooked through.  

Deep fry the remainder of the batter and transfer fried Gulgulas to a plate lined with paper towel. Serve while warm. Enjoy! 

Notes

1. The milk can be adjusted to make the batter of medium consistency. The batter should be half way between a cake and cookie batter, not too runny and not too thick.
