Loaded Potato Tacos


Raise your hand if you love Mexican! Now raise your other hand if you love potatoes! If you have both your hands currently raised, you’re going to absolutely love these loaded potato tacos. We’re really trying to limit food waste in our house and we always end up buying way too many potatoes than the both of us can really eat. So I started on a mission to use them up and after this meal, I don’t think we’ll be having a ‘potato problem’ anytime soon.

Another good thing about these delicious potatoes is that they look so fancy! Whip them up at your next hosting event and you’ll have everyone thinking that you had to put in the hard yards to plate this up. But in all honesty, these loaded tacos are one of the easiest meals in my collection to date. Obviously, the bigger the better for this meal and I prefer using unpeeled white washed potatoes. You can also place a chopstick through the bottom of the potato which will help you from cutting all the way through when making the slice pockets.

Ingredients:

6 unpeeled white washed potatoes
500g beef mince
3-4 tablespoons taco seasoning
2-3 cloves of garlic crushed
1-2 tsp ginger minced
1-2 tsp cayenne pepper
1-2 tsp parsley
Salt to taste
Black pepper
1 cup grated cheese
Sour cream to serve
Guacamole to serve
Thinly sliced spring onions to serve
Crushed Doritos to serve (optional)
Few tablespoons of oil

Method:

Preheat oven to 200 C fan forced. Wash your potatoes and start to thinly slice the potato lengthways, without cutting all the way through. Repeat with remainder of potatoes and place on oven tray.

Season the prepared potatoes with salt and pepper and a few tbsps. of oil and place in the oven for 1 hour or until cooked through.

While the potatoes are in the oven, heat the remainder of the oil in a pan and then add garlic and ginger. Sauté for a few minutes and add beef mince. Add taco seasoning, cayenne pepper and parsley and mix well. Taste for salt and pepper and add if necessary.

Cook mince until all liquid has evaporated (This should take 10 minutes) and set aside. Once potatoes are cooked, bring them out of the oven and place prepared mince in the slice pockets. Load each pocket generously with mince and sprinkle the potato with grated cheese. Place back in the oven for a further 10 minutes or until cheese has melted.

Remove from oven and top with sour cream, guacamole, spring onions and crushed doritos. Serve while warm and enjoy!
