Garlic Bread BBQ Pizza Sub


Do you guys ever look at two people and strongly believe that they should be together? I felt the exact same way about garlic bread and pizza so I married them off. And the result: Absolute bliss for those of us who get to taste this thing! On a serious note, I can't fathom why this food combination didn't come to me earlier. You can go down to your local pizza shop and they'll serve garlic bread as a side. But who knew making them as one meal would taste so good! I think I'm done with actual pizza base now. Garlic bread as pizza base for life! Who's with me? 

Ingredients:

Garlic bread (I used La Famiglia Herb Bread 400g)
200g boneless chicken, diced
1 tbsp minced garlic
1 tbsp ginger paste/crushed ginger 
1 tbsp oil of your choice
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp bbq sauce 
2-3 tbsp sweet chilli sauce 
1 tbsp tomato sauce
1 red onion, sliced
1 red capsicum, sliced
Pineapple chunks, desired amount
Grated cheese, desired amount
Mixed herbs, desired amount
Salt to taste
Black pepper to taste

Method:

Preheat oven to 180 C / 356 F fan forced. Heat oil in a pan over medium heat and add garlic and ginger. Mix to combine and add boneless chicken. Add soy sauce, oyster sauce, bbq sauce, salt, pepper and cook until all water has evaporated. Set aside. 

Place garlic bread loafs on prepared baking tray and spread mixture of sweet chilli sauce and tomato sauce evenly on both loafs. Top with sliced red onion, capsicum and cooked chicken. Place pineapple chunks evenly across the loaf and sprinkle desired amount of mixed herbs. Sprinkle with grated cheese and bake until cheese has melted. Serve while warm!
