Chicken Nachos


Carrying on the Mexican food love from the blog, I present to you a very resourceful tray of loaded chicken nachos! The reason I say ‘resourceful’ is because we used leftover chicken from the Vietnamese rolls (From my previous post) to make this tray of deliciousness. We also had some Doritos lying around and vegetables that needed some TLC so we threw it all together and TA DA! Loaded chicken nachos was created.


Ingredients:

Shredded chicken, cooked
Doritos 330g (Your favourite flavour – I love cheese!)
Black beans 400g drained
Corn kernels 400g drained
Guacamole (Store bought or homemade)
Sour cream
Coriander, chopped
Spring onions, chopped
Old el paso taco mix 30g
Grated cheese

Method:

Preheat oven to 180 C / 356 F (Fan forced)

Heat up shredded chicken in a pan over medium heat and add in desired amount of taco mix. Stir to combine and add in black beans and corn kernels. Set aside.

Arrange Doritos corn chips on baking tray and then scatter chicken, bean and corn mix generously. Sprinkle desired amount of grated cheese over the top and bake until cheese has melted.

Top with prepared guacamole, sour cream, spring onions and coriander. Inhale immediately!
