This dessert has SUMMER written all over it! Although the warmer
weather has come to a halt this week in Sydney, I will continue to recreate
this dessert throughout the year with different toppings. For the original
recipe, I used lots of orange juice and lots of strawberries. And yes, it
worked! The orange juice provided the tangy flavour and the sweet strawberries
complemented it perfectly. This is also another really easy dessert that was inspired by Woolworths but it does
need a few hours of setting so keep that in mind if you are planning to serve
this up in the near future.
Ingredients
250g packet Unibic sponge fingers
250g spreadable cream cheese
300mls sour cream
500g punnet fresh strawberries
2 tbsp castor sugar
2-3 cups orange juice
Method
Grease and line a loaf pan with baking paper and set aside. In a
medium sized bowl, whisk cream cheese until smooth. Add sour cream and sugar
and whisk further until combined.
Dip 7 sponge fingers into orange juice, one at a time and place on the
base of the prepared loaf pan. Cover fingers with 1/3 of the cream cheese and
sour cream filling and top with a layer of chopped strawberries. Repeat process
twice more and top last layer of fingers with filling. Place in the fridge for 2-3 hours to set.
Once ready to serve, transfer dessert to a serving platter and top
with fresh strawberries and enjoy!
