Almond Croissant



Transform your regular store-bought croissant into this elegant sweet pastry that comes together in minutes. The croissant is sliced in half and filled with almond paste which is made with almond meal, flour, almond extract, sugar and butter. The same paste goes on the top of the croissant and is sprinkled with sliced almonds. To serve the almond croissants you can make your own glaze or warm vanilla custard. 



Serves: 6 croissants

Ingredients 

6 medium sized croissants
1/2 cup sliced almonds
Icing sugar for dusting

Almond paste:
 
2 cups almond meal
1/3 cup all purpose flour
1/2 cup icing sugar, sifted 
150g butter, melted 
1/2 tsp almond extract

Method 

In the bowl of a stand mixer add almond meal, flour, icing sugar, butter and almond extract. Mix together on medium speed until well combined. Reserve 1/4 cup of the almond paste. 

Preheat oven to 160 C fan forced and line a tray with baking paper. Set aside. 

Slice croissants in half and spread with almond paste. Replace the croissant tops, spread with remaining almond paste and top with sliced almonds. Bake in the oven for 12-15 minutes until golden. Dust with icing sugar and serve warm. Enjoy!
