Two-in-one Tiramisu


Tiramisu is a decadent dessert that's always a crowd pleaser. The hint of coffee between every bite of biscuit and cream is subtle yet inviting and it surely works a charm at any gathering. The original recipe makes 6-8 servings but you can half the quantities of all ingredients and create the raspberry layered tiramisu for two that I posted recently.



For the original recipe I used a square baker tray, like this one available at Kmart. And I used the IKEA 365+ clear mugs for individual servings.

Ingredients

18 lady fingers/savoiardi sponge fingers
250g mascarpone cheese (Room temperature)
200ml double cream
2 tbsp. instant coffee
White or castor sugar to taste (I used about 3 tbsp.)
1 and ½ cup Boiling water
Cocoa powder for dusting
Strawberries or raspberries to serve

Method

Place mascarpone cheese in a bowl or stand mixer. Beat for 2 minutes on medium speed until smooth and gradually add in double cream. Mix on medium speed for further 2 minutes or until combined. Gradually add sugar to cheese/cream mixture until you're satisfied with the sweetness. Set aside.

In another bowl, place instant coffee and boiling water and mix until combined. Dip lady finger in coffee mixture until fully covered and quickly place in square tray. Repeat with remaining lady finger biscuits until first layer of the tray is covered.

Roughly divide cream mixture in half and evenly spread half mixture over the lady finger biscuit base. Smooth the cream over the top with a butter knife or spatula to ensure it reaches all corners.

Start to assemble the second layer by dipping remaining lady finger biscuits into coffee mixture and placing it on top of the first cream layer. Repeat until the second layer of biscuits is complete. Top second layer of lady finger biscuits with remaining cream and spread evenly.

Lightly dust cocoa powder on top of the cream and place Tiramisu in fridge for 6-8 hours or preferably overnight. Serve with freshly sliced strawberries or raspberries. Enjoy!

Notes

Half all ingredients in quantity to make two individual servings.

Lady fingers tend to absorb liquid quickly therefore be careful with how long you dip them into the coffee mixture.

Dice raspberries into small chunks and place a layer of raspberry filling between the biscuit and
cream layer for added flavour.

Fruits and toppings can be replaced as per your preference.
