Choc Cherry Trifle


Trifle is usually a token summer dessert but this choc cherry trifle has just the right amount of twists to transform into a delicious winter dessert. Majority of the ingredients are store bought and ready to go so the hardest part of it all is just putting it together. I did have a hard time finding fresh cherries in the supermarket on the day I whipped this up therefore I opted for frozen pitted cherries for the filling and fresh ones only for topping - It's a bit cheaper on your wallet too! Overall this recipe is fuss free, quick to put together and a winner for sure. If you give it a go, I'd love to hear about how it turned out.

Ingredients

Store bought chocolate sponge roll 400g x2
Readymade vanilla custard 1kg 
Frozen fresh pitted cherries 500g, thawed
Fresh cherries 300g, rinsed 
Dark chocolate melts 145g
Whipped cream 250g 
Small milk chocolate bar (optional)

Method

To make your chocolate custard, place dark chocolate melts evenly in a bowl and microwave for 30 seconds at a time until completely melted and smooth. Set aside. 

In another large bowl pour the readymade vanilla custard and heat in microwave until warm. This may take 2-3 minutes. Alternatively place the custard in a small saucepan and simmer over low heat. Be careful not to overheat and boil. 

Once the custard is warm, (remove from heat if using stove top) start to gradually mix in the melted chocolate until it's combined. Set aside. 

Slice the chocolate sponge rolls into thin disks as pictured above and place one layer on the bottom and sides of the trifle bowl. Pour the chocolate custard over the sponge disks, followed by a layer of pitted cherries. Top with whipped cream and repeat layers until you reach the top of the bowl. 

Top with fresh cherries and finely peel chocolate bar over cherries to create chocolate shavings. Serve immediately or place in fridge until ready to serve. Enjoy!
