Mini Tim Tam Dessert Cups


As I've grown older, I've seemed to have fallen more in love with chocolate. I'm not a 'one block a day' girl but whenever I think of a cheat treat to indulge in, it has to be smothered in chocolate. Over the weekend, we were put on dessert duty for a family dinner and I couldn't go past the idea of making mini dessert cups. In a world where we're all trying to consume less of the bad stuff, a mini dessert cup is the perfect way to devour what your heart desires but in small quantities. I opted for Tim Tams as the star of the dessert because they are just so delicious and chocolate-y. Need I say more?

Ingredients

2x 200g Tim Tams (I opted for original)
225g cream cheese, room temperature
200g condensed milk
150g double cream 

Chocolate sauce:
145g chocolate melts 
100g double cream

Method

Using a food processor, crush 300g Tim Tams until it turns into fine crumbs. Set aside. 

In a bowl, place cream cheese and beat using a handheld or stand mixer until light and fluffy. Add condensed milk and on medium speed, whisk until combined. Gradually add 150g of double cream and whisk until all the ingredients are combined. 

Stir 200g Tim Tam crumbs (reserving 100g for later) into cream mixture until well combined. Transfer to a piping bag and set aside. 

In a heat safe bowl, place chocolate melts and microwave at 30 second intervals until melted. Immediately add 100g of double cream and stir until combined. 

Assemble dessert cup by placing 2 teaspoons of crumb mixture into the base. Pipe cream cheese mixture over the crumbs until dessert cup is 3/4 full. Add one teaspoon of melted chocolate sauce and sprinkle a few more Tim Tam crumbs over the top. 

Cut a whole Tim Tam biscuit in half and place one half through the middle of the cup until secure. Repeat assembly steps for the remainder of dessert cups. Serve immediately or place in fridge and remove 30 minutes before serving. 

Notes

Recipe will make 10-12 mini dessert cups.
